You may like to consider using the plugin: WP Rollback when you want to roll back to a previous version of a plugin or theme.
It work very well and is very easy and fast to use, as all past versions are immediately available. I have been using it for years for an instant fix when there is a update conflict. Wouldn’t be without it!
You will find 5.1.1 and all versions there….
