A tech rep suggested that I create a subdomain while developing an updated site using Xtreme so that the original site will remain functional during the update. My question is how to incorporate a child theme and how to replace the original site with the subdomain site? What will happen with all the hyperlinks when moving from subdomain to replace domain site?

Was the original site a wordprerss site?, which site has your live up to date data?
Because if the original site is the site with all the up to date data and is a WordPress site, now that you have all the style worked out on the sub domain site, all you need is:
Download all the Xtreme options of the sub domain site (Save / Restore > Download all settings, or if you have Plus, +Xtreme plus > Save Restore . Download all settings)
Then Install Xtreme on the original site, and upload the settings you downloaded. You will have a few WordPress settings to fine tune and may be a few widget to move back to the proper area, but that will get all you new design onto the old site.

The original site does not appear to be WordPress but not really sure.
The hosting is being changed to Godaddy and the domain nameservers will be pointed to the new hosting when the subdomain site is elevated to the domain and goes live.
The subdomain site under construction is in the new hosting account at GD and will have the new up to date data.Should I incorporate a child theme with the subdomain site just as if it were a domain site and will the child theme work okay when we remove the <new.> from the domain and point the nameservers? (Never done this before)
What will happen to hyperlinks set up in the subdomain when the site is changed to domain? The subdomain is here and the domain site being replaced is here.
If the site in the subdomain is the final site, then you can clone it in the Final directory where it will be using any of the cloning methods. There is an FAQ on this site

Once you have the site in its final place create your child theme if you do need one (make sure you do 🙂 )
A couple of observations:
Since the new development site is a subdomain, and is WP, there are things that will need to be done in the WP environment when migrating its database and wp-config.php to the main domain name. These tasks and detailed instructions are covered in various WP forums, and on the WP Codex site: http://codex.wordpress.org/Moving_WordPress.
I do a similar thing when developing and/or doing major changes to my own real estate website, even though it does require a second additional Xtreme Plus theme license. My site uses a number of Plus plugin features, so I need that. I periodically copy/clone my main production site to the subdomain before major development work, then back to the main domain when ready for production.
I don’t see an IDX/RETS search yet on your development site. While Xtreme is great at being mobile responsive, you will need to be sure your IDX/RETS search features are also mobile responsive. If it’s an Iframed plugin, it may be a problem. Mine is not Iframed, but I had to work closely over the last couple of weeks with the IDX/RETS development team for the product I use to make it fully mobile responsive, and to work smpoothly with Weaver Xtreme, and now it’s working great. 1. It is perfectly fine to use an unregistered copy of Weave Xtreme Plus on a development site. You just won’t get the automatic updates, but you can manually update from the registered version.
2. RE: IDX/RETS – @ronnieg, by you, I assume you mean the end user, and not us. We really can’t do much to control plugins and iframes as far a how responsive they are.
The non-responsive behavior of many existing plugins and other web “apps” (apparently IDX/RETS) is one of the major issues that keeps coming up on this forum. Unfortunately, there is very little a theme can do – as you found, one needs access to the original source. Frankly, I’m surprised something like IDX/RETS which is likely to be used by agents and customers on smart phones as they are out and about is not already very mobile aware. I hope they wake up!
