When you post by email with WP you are posting to the default category , am i correct assuming that?
The WordPress internal feature has a default category settings (settings > Writing > Post by Email)
That said, I read Post by Email was going to be deprecated, so you should probably look for a plugin to have full control and be future proof. These plugins (like below) give you shortcode to specify the category within the Email.
